Glazed Honey Drunken Salmon



2 cups whole almonds
4 cups old fashioned oats
1/4 teaspoon salt
1 1/2 cups all purpose flour
1 cup melted coconut oil
1 cup maple syrup
Columbia Empire Farms Jam of your choice



Begin by lining 2 baking sheets with parchment paper or a silpat while preheating the oven to 350 degrees. Pulse the nuts in a food processor until they are chopped into small pieces but be sure not to grind them too finely, then transfer to a large bowl. Again with the food processor grind together the oats and the salt making sure to leave plenty of texture. Transfer the oats to the bowl with the nuts and add 1-1/4 cup flour reserving the other 1/4 cup of flour for later. Pour in the oil and maple syrup and stir with a wooden spoon to combine. If the dough seems too runny add some of the reserved flour but don't worry, the dough will thicken up if you let it sit for about 15 minutes. Form the dough into little balls with your hand or use a cookie scoop to arrange on baking sheets. Use the back of a 1/2 teaspoon measure to make a small indentation in the top of each cookie and then use the same spoon to fill the indentation with the jam of your choice. Bake the cookies for about 15 minutes until golden brown and crispy. Let cool for about 15 minutes after removing from the oven and be careful not to move cookies from baking sheets to a wire rack until they are completely cooled as they will be quite fragile while they are still hot.
